Autumn brings that cozy feeling... and lots of squashes and pumpkins. Meals of soups, slow roasted meats, and stews. Caramelized Onion, Eggplant, and Zucchini, sauteed in Olive Oil then tossed with Pasta makes for a quick and easy dish...
Warm Arugula and White Bean Salad, topped with shaved Parmigiano Reggiano ...
Buonissimo! ieri ho rosolato la melanzana a cubetti, con la cipolla e peperoni rossi e l'ho servita col salmone e quinoa.

ReplyDeleteGood Morning,Mary!
ReplyDeleteThank you for popping in to visit!
We have a bit of an Italian connection. My grandfather was a chef in an Italian Restaurant in downtown Seattle. My husband's father was born in Trieste.
Your blog is beautiful. I look forward to visiting you as well.
I love how you mixed up your pasta. (My grandmother always used Rigatoni...my favorite is Penne Rigate!)
It's always a treat to find a new blog friend!
